What custom sweetener formulation is and why your product needs it
Removing sugar from a recipe is not just a matter of swapping one ingredient for another. Sugar sweetens, but it also adds volume, retains water, browns, preserves and builds texture. A generic sweetener only solves sweetness; a custom formula solves everything else.
At Edulcodiet we combine high-intensity sweeteners, such as stevia or sucralose, with bulking agents, such as erythritol or xylitol, in the proportion your product requires. The result is a blend that behaves on your production line as your team expects, with a clean taste profile and a label that allows claims such as ‘no added sugars’ when the product complies.
Sweetness equivalent to sugar, with no metallic or bitter aftertaste.
Volume, moisture and texture adjusted to each process.
Cost per kilo defined from the first meeting.
Formula developed in line with EU regulations on additives and labeling.
Defining the formula with the customer
How we develop your industrial sweetener, from idea to production
A three-phase process with a single point of contact, so you can move from a sugar-based recipe to a market-ready product without improvizing.
1
We define your custom sweetener
We meet with you to understand the product, the market, the sweetness level, the positioning and the target cost. With that information we set the basis of a formula tailored to your brand, your channel and your end consumer.
2
We test and adjust the formula in the laboratory
Our R&D team prepares and validates several formulations until it finds the right balance between taste, sweetness, technical performance and cost. No blend goes into production without being tested first.
3
We manufacture your formula at industrial scale
Once the formula is approved, we produce it at our facilities following the parameters defined for your project. We manufacture for industry, distribution, retail and private label.
Sweetener formulation for every application
Every food poses a different challenge. Choose your sector and find out what we solve in the formula.
Sweetener formulation for food
From sauces and dairy to cereals, snacks or powdered mixes, sweetener formulation for food starts from the product matrix: its moisture, its pH, the heat treatment it undergoes and the shelf life it needs. With that data we choose the combination that sweetens without altering the rest of the recipe.
Blends stable to heat and acidity.
Fast or lingering sweetness profiles depending on the product.
Options to reformulate and reduce sugar without changing the process.
Sweetener formulation for pastries
In pastries, sugar supports the structure: it adds volume to the dough, retains moisture, feeds fermentation and gives the characteristic browning. Our sweetener formulation for pastries replaces that function with bulking agents and adjusts the sweetness with high-intensity sweeteners, so that muffins, croissants or sponge cakes keep their soft crumb.
Volume and weight equivalent to sugar.
Moisture control to extend shelf life.
Adjustments to restore color during baking.
Sweetener formulation for baked goods and confectionery
Creams, fillings, meringues, cookies or glazes: every industrial confectionery product depends on how sugar crystallizes, dissolves or whips. Sweetener formulation for baked goods and confectionery seeks the exact texture of your product, with a clean mouthfeel and no aftertaste.
Particle sizes adapted to creams, coatings or doughs.
Balance between sweetness, creaminess and stability.
Solutions for industrial bakeries and HORECA.
Sweetener formulation for chocolate
Sugar-free chocolate requires a powdered sweetener with very low moisture that performs well during refining and conching. In sweetener formulation for chocolate, we combine polyols and high-intensity sweeteners to respect the cocoa profile and offset the cooling sensation erythritol can give.
Low-moisture blends for chocolate, cocoa spreads and coatings.
A rounded taste, with no cold or bitter notes.
Careful labeling when polyols are used.
Sweetener formulation for jam
In traditional jam, sugar gels and preserves. When it is reduced, sweetener formulation for jam is designed together with the gelling system, the pH and the process, so the preserve sets, keeps the color of the fruit and remains stable.
Blends designed to work with low-methoxyl pectins.
Body and shine without the artificial taste of other alternatives.
Review of the product's legal name according to its final sugar content.
Sweetener formulation for alcoholic beverages
Liqueurs, cream liqueurs, ready-to-drink cocktails or ciders need a sweetener that is soluble, stable in acidic and alcoholic media and free of aftertaste. Sweetener formulation for alcoholic beverages also takes into account which sweeteners are authorized in each beverage category and each target market.
Liquid or powdered blends that dissolve easily.
Sweetness that complements the alcohol without masking the aroma.
Regulatory review by category before proposing the formula.
Intense plant-based sweetness in very small doses.
Beverages, dairy, jams, combined with bulking agents.
Sucralose
Intense, clean sweetness, stable to heat and acidity.
Beverages, baked goods, sauces and acidic products.
Xylitol
Sugar-like sweetness with a cooling sensation.
Confectionery, fillings and specific applications.
Monk fruit
Fruit sweetness for natural profiles.
Subject to the regulations of the target market.

Frequently asked questions about sweetener formulation
Answers for manufacturers of pastries, baked goods, chocolate, jams and alcoholic beverages who want to reduce or eliminate sugar.
Can't find your question?
Tell us about your product and a technician will reply with a specific proposal.
What is custom sweetener formulation?
It is the development of a sweetener blend designed for a specific product. High-intensity sweeteners, such as stevia or sucralose, are combined with bulking agents, such as erythritol or xylitol, to match the sweetness, volume and technical behavior of sugar in that recipe at a target cost. At Edulcodiet we define it with you, validate it in the laboratory and manufacture it at industrial scale.
Which sweetener is best for sugar-free industrial pastries?
There is no single ideal sweetener. In pastries, sugar provides volume, moisture, color and shelf life, so a polyol base such as erythritol is usually combined with a high-intensity sweetener that fine-tunes the sweetness. Often the lack of browning and water retention must also be offset. That is why we formulate from your recipe and test the blend before producing it.
How do you replace sugar in industrial baked goods without losing texture?
By replacing the solid part of the sugar weight for weight with bulking agents and adjusting the sweetness with high-intensity sweeteners. In creams, fillings, sponge cakes or cookies, crystallization, creaminess and water activity change, so the proportion of each component is adjusted for each product and validated in the laboratory.
Which sweetener is used for sugar-free chocolate?
Chocolate requires a powdered sweetener with very low moisture that performs well during conching. Polyols such as erythritol are usually combined with stevia or other high-intensity sweeteners. Erythritol can give a cooling sensation, so the blend is balanced to respect the cocoa profile.
Can you make sugar-free jam that sets and keeps?
Yes, but the recipe has to be redesigned. Sugar plays a role in gelling and preservation, so when it is reduced the gelling system (for example with low-methoxyl pectins), the pH and the process are adjusted. The sweetener blend provides the sweetness and part of the body. The product's legal name may change depending on its sugar content, which should be checked before launch.
Which sweetener should be used in alcoholic beverages and liqueurs?
Beverages need sweeteners that are soluble, stable in acidic and alcoholic media and free of aftertaste, such as sucralose or steviol glycosides, sometimes combined with others. Authorization of each sweetener varies by beverage category, so we review the regulations applicable to the target market before proposing the formula.
In what formats is the industrial sweetener supplied?
Edulcodiet supplies its industrial sweeteners in 25 kg boxes and 500 kg big bags, ready for distribution, retail, private label and production lines.
Do you manufacture private label sweeteners?
Yes. We develop and manufacture private label sweeteners at our facilities in Perafort (Tarragona), based on the formula approved with each customer.
Do sweeteners with polyols have a laxative effect?
Some polyols can if consumed in excess, and in the European Union foods with more than 10% added polyols must state this on the label. Erythritol is one of the best-tolerated polyols. When formulating, we choose the bases taking into account the serving size and labeling of the final product.
How long does it take to develop a custom formula?
It depends on the complexity of the product and the number of adjustments needed in the laboratory. After the first meeting we give you a specific timeline with the definition, testing and production phases.
