Which sweetener is best for sugar-free commercially baked goods?
There is no single ideal sweetener. In pastries, sugar provides volume, moisture, color, and preservation, so a base of polyols like erythritol is often used, combined with an intense sweetener to adjust the sweetness. Often, the lack of browning and water retention also need to be compensated for. That's why we formulate based on your recipe and test the mixture before production.
How can sugar be replaced in industrial baking without losing texture?
By replacing the solid portion of the sugar weight for weight with bulking agents and adjusting the sweetness with intense sweeteners. In creams, fillings, cakes, or cookies, crystallization, creaminess, and water activity change, so the proportion of each component is adjusted for each recipe and validated in the laboratory.
What sweetener is used for sugar-free chocolate?

Do sweeteners containing polyols have a laxative effect?
Some polyols can cause allergic reactions if consumed in excess, and in the European Union, foods with more than 10% added polyols must indicate this on their labels. Erythritol is among the best-tolerated polyols. When formulating, we select the base ingredients taking into account the serving size and the labeling requirements of the final product.
